Join us as we sit down with John and Kendra Marsh, the passionate owners of En Fuego Cantina, who have been delighting Southeast Aurora with their culinary creations!

What was the inspiration behind En Fuego Cantina?

Honestly, it’s a collage of living in many places around the U.S. and seeing many different cooking styles. We’re definitely influenced by tex mex, but there is also a freshness element to our food from places like California, Austin, and our favorite beach locations.

We wanted to create a space where our friends and family would like to spend time. We are trying to bring a Denver experience with high-quality food and drinks and a fun atmosphere to Southeast Aurora so we don’t need to drive downtown.

What do you love about operating in Aurora?

The community is fantastic. Upon opening, we were given a giant bear hug from the community. Everyone in southeast Aurora has been so incredibly welcoming. Aurora is such a wonderful and diverse community, and we have met so many amazing people with incredible stories and backgrounds. We truly enjoy our customers and our close connections with this community.

What sets your cuisine apart? Is there a particular dish that customers rave about and that newcomers simply must try?

Quality. I spent 20+ years selling groceries to restaurants. I enjoy offering quality levels that rival fine dining establishments. Every single detail is paid attention to. If you come to one of my restaurants and don’t enjoy yourself, something is off, say something! If there is a must-try, I’d have to say the Skirt steak tacos or the bacon-wrapped jalapenos!

What is the one thing you hope every guest takes away from their visit?

I'm not sure there is just one! Our freshness, our quality, a memorable experience, and a desire to come back and try other dishes.

What are you most proud of as business owners?

Our staff—we’re nothing without them. The biggest reward is providing our staff with a competitive income within this industry. We are focused on developing our staff, and it is very rewarding to see them grow professionally and know we have a hand in helping them reach their goals.
